THE AUTHOR
Ju Chamalo works in a large banking group, an environment totally opposed to the world of pastry that he particularly likes. A real sweet tooth, Ju discovered a passion for flans which he shares on his Instagram account (5,000 to 10,000 likes per post) and which led him to collaborate with the Tartelettes pastry shop and with Desty Brami, pastry chef executive of the Château de Ferrières. Self-taught, interested and curious, his boundless passion could turn into a professional retraining in pastry with the aim of opening a “Flanterie”. Who knows?
