Delicious Traditional French Cuisine
150 classic recipes that we love, history and know-how
A comprehensive book on traditional French cuisine, by Joseph Viola, MOF chef
There are dishes that we have all eaten (Sunday chicken) and those that are not always unanimous (tartare and andouillette). Dishes that many children first liked in their industrial version (cordon bleu) and those that the canteen made us hate (quenelles). Trendy dishes (eggs Benedict) or forgotten (bouchées à la reine). Those that we make all the time (croque-monsieur) or that we do not dare to make (cheese soufflé and pâté en croûte). Dishes that vaguely mean something to us (hare à la royale), and those whose name makes us dream (lobster Thermidor). Everyone has their own recipe for rice pudding or chocolate mousse.
We all have a story with traditional French cuisine: that's what elevates it to the rank of tradition. This cuisine that brings people together and takes us back to childhood was written in old books. A new one was needed to bring together all these recipes that constitute a living heritage, because we cook them as before, but not quite as we used to.
