Confectionery and pastries
50 recipes with the good taste of childhood
Hugues Pouget introduces us to the art of confectionery in 50 regressive and accessible recipes.
Sugar that sticks to your fingers and caramel to your teeth, chocolate that melts on your tongue, silver paper that squeaks under your fingers... we all have a memory of our favorite candy, the one that reminds us of childhood, snacks after school or an afternoon spent with the family. Often beautifully packaged, neatly stored in pretty metal boxes, candy has the good taste of childhood.
Hugues Pouget invites you to rediscover this taste through 50 recipes for confectionery and pastries. Drawing on the history and expertise of the Mazet confectionery and its famous Montargis pralines, the chef offers workshops to learn how to easily make chocolate truffles and molds, nougatine, fruit pastes and even almond paste.
In addition to these delicious sweets, there are recipes for old-fashioned biscuits and pastries such as Florentines and almond tart, as well as very gourmet recipes based on praline, such as Paris-Brest, praline choux buns or praline crème brûlée. Enough to transform your kitchen into a real confectioner's workshop!
