Full Heart
Pastry, the land and people: 60 recipes and reports from our region
A double first time: first book by chef Maxime Frédéric, first pastry book highlighting the producers behind the cakes.
Behind each Maxime Frédéric pastry, there is a human story, the love of products and the men who cultivate them. From the chicken egg to the chocolate egg, from the Normandy farm to the Parisian palace, there is only one step. The pastry chef shapes materials that have meaning, those of mills, orchards and creameries. His know-how elevates to the rank of works of art perfumes that we all have in common: childhood memories.
In this book, Maxime Frédéric highlights the producers and his teams with whom he works on a daily basis, through magnificent reports. Eggs, flours, chocolate, coffee, milk, honey, hazelnuts, rhubarb, orchard fruits and herbs are celebrated in all their diversity with nearly 60 recipes. Douillon, millefeuille, pain au chocolat, wild strawberry vacherin, waffle, apple galette, rye pie… Which of the egg or the pastry will have preceded the emotion?
